Banana Butter Cashew Bread

When I was younger I remember eating banana bread from Shangri-La Hotel's bakery and it was delicious! It had that distinct taste of molasses and had a chewy crust. Inside, the bread had a nice texture and was moist and you can really taste the bananas. I loved it and always thought about making it. Well, I didn't quite make the same exact banana bread. Here's something I made today which I am sure will tickle your tongues and put a smile on your face! The smell, the taste and the texture is delightful!

Banana Butter Cashew Bread

The Ingredients:
  • 4 medium ripe bananas
  • half a slab of butter
  • 1 tbsp milk
  • 1 1/2 tsp vanilla
  • 1 egg
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp baking soda
  • salt
  • 1 1/2 cup flour (do not use self-raising flour)
  • chopped raw cashew nuts
The Procedure:

Mash the bananas in a large bowl and mix in the milk and butter. Once it's all mixed, beat the egg and pour it in along with the sugar and the vanilla. Now mix in the baking soda and the salt. Lastly, put in the flour. Mix thoroughly and pour into your greased loaf pan which is usually a 4x8 size pan. While waiting for it to settle, pre-heat your oven to 200C. Now top the mixture with cashew nuts and throw in the oven for 40 minutes. Stick a knife in it when you check. If the knife doesn't come out clean, leave it in for a few more minutes.   



mash the bananas.

pour 1tbsp of milk.

put in half a slab of butter.

mash it all together.

beat the egg.

pour in the beaten egg.

pour in the 3/4 cup brown sugar & the 1/4 cup white sugar.

put in 1 1/2 tsp of vanilla.

put in 1 tsp of baking soda.

put in some salt.

put in the 1 1/2 cups of flour.

grease your loaf pan.

pour in the mixture.

put on the cashew nuts.

make sure the cashew nuts are all evenly spread and throw it in the pre-heated oven.

take it out after 40 minutes.

slice and enjoy!

Enjoy with vanilla ice cream for the perfect dessert!
